Quick & Creative Ways to Enjoy Frozen Cookie Dough

Cool down this summer with these fun and creative ways to enjoy our frozen cookie dough pucks and your favorite ice cream flavors. Homemade Cookie Ice Cream Sandwiches are made easy with our frozen cookie dough. Plus, there are endless flavor possibilities. You could even do something crazy, like roll the ice cream in your favorite dry cereal… Yum!

It’s actually surprising how many different ways we can enjoy cookies + ice cream together. But, that’s fine by us! It give us an excuse to enjoy these yummy desserts together more throughout the summer.

  1. Cookie Sundaes. Using our Cast Iron Mini Skillets (#1128), use your favorite Simply Goodness Cookie Dough Pucks to fill the bottom of your skillet. Bake at 350°F for 10-12 minutes, or until the cookie is firm. Let cool down. Top with your favorite ice cream, whipped cream, and Uncle Denny’s Caramel Sauce (#7894).
  2. Cookie Icebox Cake. Again using your favorite baked and cooled Simply Goodness Cookie Dough Pucks, arrange 9 cookies in a circle on a cake stand. Then, spread ice cream over the layer. Repeat to form 4-7 more layers. Top with powdered sugar and chocolate shavings. Enjoy!
  3. Cookie Cups. Using your favorite baked and cooled Simply Goodness Cookie Dough Pucks, add a puck to each well in a standard muffin tin. Form dough around sides. Bake as directed, or until cookies become golden brown. Let cool, and scoop your favorite ice cream into your cup. Top with sprinkles, cherries, nuts, whipped cream, Uncle Denny’s Caramel Sauce (#7894) , or your favorite ice cream toppings.

Candy Cookie Ice Cream Sandwich

Ingredients:

Instructions:

  1. First, preheat a conventional oven to 350°F.
  2. Evenly spread cooking dough pucks on a silicon mat (#8436) lined cookie sheet (#4020).
  3. Bake 10-12 minutes. Baking times may vary depending on oven.
  4. Remove from oven; allow to cool for 3 minutes before removing from pan, then transfer to a cooling rack (#1145) to cool completely. Once cooled, move to the freezer for about an hour.
  5. To assemble, top one cookie with a scoop (#3838) of ice cream. Place another cookie on top and gently press down to form the sandwich. Roll the edges in sprinkles and immediately place back in the freezer. For best results, freeze at least 2 hours before serving.

  2. Spoon chilled dough about 2 inches apart on a silicon mat (#8436) lined cookie sheet (#4020), enough for 8 cookies.
  3. Bake 12-13 minutes, or until edges are golden brown.
  4. Remove from oven; allow to cool for 3 minutes before removing from pan, then transfer to a cooling rack (#1145) to cool completely. Once cooled, move to the freezer for about an hour.
  5. To assemble, top one cookie with a scoop (#3838) of ice cream. Place another cookie on top and gently press down to form the sandwich. For best results, freeze at least 2 hours before serving.
