Keto Chicken Lettuce Wraps
Ingredients:
- 1 1/2 cup Pierce’s Seasoned Diced Chicken (#7787), thawed
- 1/3 cup celery, finely diced
- 2 green onion, chopped
- 2 Tbsp cilantro, stems removed & chopped
- 3 Tbsp BBF Avocado Oil Mayo (#1537)
- juice of 1/2 a lime
- 1 1/4 cup Simplot Avocado Dices (#1645), thawed overnight
- Regal Fine Sea Salt (#1146) & AP Black Pepper (#1029) to taste
- 9 butter or baby green head lettuce
Instructions:
- First, heat the chicken through if desired. Since it is precooked, it simply thaw the chicken overnight in your fridge. This recipe will work with it cold or warm, depending on your preference.
- Now, combine the chicken, celery, green onion, and cilantro in a bowl. Then, stir in the mayo and lime and mix until everything is coated. Carefully stir in the avocado, trying not to squash it.
- Next, scoop the mixture into the lettuce leaves and top with extra cilantro and AP Mild Paprika (#1697).
