Creamy Loaded Baked Potato Soup

Ingredients:

  1. To begin, prepare the baked potatoes. Pierce them in multiple spots with a fork, then place in the microwave until tender, about 12 to 15 minutes. (You can also do this in the oven). Once they are cooled down, remove the skin and cut into big pieces.
  2. While those are cooking, prepare the bacon in a skillet over medium-high heat until they reached your desired crispiness. Move to a paper towel-lined plain to remove the excess grease. Set about 1 Tbsp of bacon grease to the side, and discard the rest. When the bacon is cool, crumble it.
  3. Next, melt the butter in a large pot over medium-low heat. Then, add the reserved bacon grease, garlic, and onion and cook until the onion is tender. Whish the flour into the pan slowly, and stir for 1-2 minutes. Then, slowly add the milk and half and half. Keep whisking until it reaches a smooth consistency, then add the chicken stock. Let it simmer lightly, then add the spices and simmer for 5-7 minutes, until it begins to thicken.
  4. Now, stir in the cheese, bacon, and sour cream. If you wish to reserve any to top with, set aside. Remove the pot from the heat, and add the chopped potatoes into the pan. You can leave them chunky or break into smaller pieces. Enjoy!
