3 Ingredient Slow Cooker Taco Chicken
This 3 Ingredient Slow Cooker Taco Chicken is one of the easiest bases for multiple meals. It is perfect for tacos, burritos, chimichanga’s, or even homemade taquito’s. However you use it, just don’t forget your toppings to complete the meal!
How else can I use this chicken?
Like mentioned above, this slow cooker chicken is great for all of our favorite Mexican Inspired Dishes. In addition, it is great to prepare as a freezer meal for a busy night in the future. Simply store in a freezer safe container for up to 3 months.
- Chimichangas. First, fill a tortilla with the chicken, shredded cheese (#1866), and a small scoop of our Baja vegetables. Fold up the tortilla and cover in butter. Fry or bake. Cover with sour cream and guacamole, and serve with a side of rice.
- Taquitos. First, preheat your oven to 350 degrees F. Combine 1 1/2 cups of the shredded chicken with 1/4 cup shredded cheese (#1866). Spread about 1 Tbsp of the mixture down the middle of the tortilla and roll up. Fill a greased 9×13 baking dish. Then, bake for 30 minutes. Enjoy!

3 Ingredient Slow Cooker Taco Chicken
Ingredients:
- 2Â lbs boneless skinless chicken breasts (#5513)
- 1Â Tbsp Ole Taco Seasoning (#1846)
- 1 cup mild salsa
- Toppings: tortillas (#4970), shredded cheese (#1866), avocado (#1645) or guacamole (#9247), corn (#1090), tomatoes, additional salsa, etc.
Instructions:
- First, place chicken in bottom of a Slow Cooker. Sprinkle with taco seasoning and spoon salsa on top of the chicken. Spread both to entirely cover the chicken.
- Cook on low for 3-4 hours, or on high for 2 hours, until chicken is cooked through. Remove chicken to a plate to cool slightly, along with any salsa that is on top of the chicken.
- Once cooled, shred the chicken with two forks or your fingers, then place in a bowl. Stir in some of the liquid from the slow cooker, starting with ¼ cup and adding more as desired.
- Serve chicken in tortillas with toppings as desired.
