Elote Chicken Skewers

These fully-cooked, hearty 2.5 oz. portions of grilled skewered chicken breast are preseasoned with Mediterranean seasoning. They make a delicious dinner, easy party meal, or quick fix entree for high-protein dieters! 

While they’re delicious served as is, we’ve elevated them with a delicious Mexican-inspired dish. Enjoy pre-cooked chicken skewers tossed in garlic and seasoning, air fried to perfection, then finished off with a chipotle sauce and Cotija cheese.

Wondering how to serve these?

You can serve this chicken as the main dish with a side of Mexican rice and beans. Or, transform this into burritos and layer in a tortilla with salsa, Calavo Fiesta Guacamole (#1060), and all of your favorite toppings.

But, if you’re looking for a low carb option, simply serve over a bed of Flav-R-Pac Riced Cauliflower (#2743) seasoned with AP Fabulous Fajita Seasoning (#1017). Speaking of fajitas, you can also sautee a side of Flav-R-Pac Fajita Vegetables (#2069) to serve as well.

Ingredients:

Instructions:

  1. First, toss the Expresco Skewers in the minced garlic and herb seasoning.
  2. Then, preheat air fryer to 390º F. Add the skewers, and fry for 6-8 minutes, or until desired crispness is reached.
  3. Meanwhile, combine the sour cream, mayonnaise, cilantro, ground chipotle pepper and lime juice.
  4. To serve, drizzle the sauce on the chicken and sprinkle with grated Cotija cheese.
