Crock Pot Meatball Soup

There is truly nothing better than coming home after a day of work to a wonderful-smelling kitchen! We love soup season, and any excuse to break out the crock pot. Especially when it’s for a recipe as easy as this! With our Rosina Meatballs, you don’t have to worry about touching raw meat or taking the time to assemble meatballs. Simply toss them in straight from the bag!

Crock Pot Meatball Soup has Homestyle Meatballs, diced tomatoes, cannellini beans, and rotini pasta in a simple beef broth. This recipe requires hardly any prep- all you have to do is dump the ingredient in your crock pot, and boil the noodles. Easy peasy! Serve in a Janey Lou’s Bread Bowl (#8573), or with Janey Lou’s Beehive Rolls (#8925).

How long will this stay good?

As long as it is stored properly in an airtight container, this soup should stay good for up to three days in the fridge.

Ingredients:

Instructions:

  1. Line crock pot with PanSavers Slow Cooker Liner (#1089).
  2. In a 3 to 4 quart crock pot or slow cooker, mix all ingredients together except for the rotini pasta, Parmesan cheese and basil. Cover with lid and set on low heat, cook for 8 to 10 hours stirring occasionally.
  3. Cook the rotini pasta 20 minutes before your soup is done, then add to soup.
  4. Spoon soup into bowls, garnish with the shredded Parmesan cheese and basil (optional).
