Grilled Cajun Lime Chicken

One thing we love about this Cajun Lime Chicken is the many ways it can be enjoyed. Try it as the main dish, in quesadillas, burritos, or even on a salad. Plus, you can even use this for freezer meals. Simply shred the chicken and store in a freezer safe container until you are ready to use. It is good in the freezer for 1 to 3 months. If you are serving the chicken breast as the star of the show, serve with a side of Uncle Ben’s Spanish Rice (#1573) and your choice of veggies.

Grilled Cajun Lime Chicken
Instructions:
- 1 lb chicken breast (#6519)
- 2 tbsp avocado oil (#3516), divided
- 1 1/4 tsp Baja Chili Lime Seasoning (#7664)
- 1/8 tsp black pepper (#1029), or to taste
- 1/2 tsp paprika (#1697)
- 1/4 tsp oregano (#1445)
- 1 lime (juiced)
Instructions:
- Preheat a nonstick griddle pan over medium heat with 1 tablespoon of avocado oil. Use enough oil to coat the entire pan.
- Make sure the chicken is thawed. Rinse and pat dry.
- Combine all seasonings + 1 tablespoon of avocado oil into a mixing bowl (#7756) or Ziploc bag #1979.
- Add the chicken breast and toss to coat.
- Once the pan is heated, add the chicken breast and cook on each side approximately 3-4 minutes, flipping once. Time may vary based on the thickness of the chicken breast.
- Remove from heat. Serve with an extra squeeze of lime juice and your favorite side dish- see above for serving ideas.
