One thing we love about this Cajun Lime Chicken is the many ways it can be enjoyed. Try it as the main dish, in quesadillas, burritos, or even on a salad. Plus, you can even use this for freezer meals. Simply shred the chicken and store in a freezer safe container until you are ready to use. It is good in the freezer for 1 to 3 months. If you are serving the chicken breast as the star of the show, serve with a side of Uncle Ben’s Spanish Rice (#1573) and your choice of veggies.

  1. Preheat a nonstick griddle pan over medium heat with 1 tablespoon of avocado oil. Use enough oil to coat the entire pan.
  2. Make sure the chicken is thawed. Rinse and pat dry.
  3. Combine all seasonings + 1 tablespoon of avocado oil into a mixing bowl (#7756) or Ziploc bag #1979.
  4. Add the chicken breast and toss to coat.
  5. Once the pan is heated, add the chicken breast and cook on each side approximately 3-4 minutes, flipping once. Time may vary based on the thickness of the chicken breast.
  6. Remove from heat. Serve with an extra squeeze of lime juice and your favorite side dish- see above for serving ideas.
