Macaron Ice Cream Sandwiches

Macaron Ice Cream Sandwiches

Ingredients:

  • 2 boxes Delizza Macarons Assortments (#2059), room temperature
  • 16 oz. ice cream, flavor of your choice
  • Sprinkles or chopped nuts, optional
  • 1 cup melting chocolate, optional
  • 2 Tbsp heavy whipping cream, optional

Instructions:

  1. First, line a Crestware Quarter Size Baking Pan (#5957) with Crystal Wrap Foodservice Film (#6127). Then, use a silicone spatula to spread the icecream onto the tray. Cover with plastic wrap and allow to set in the freezer.
  2. Next, separate the shells of the macaroons, keeping the filling on the cookie.
  3. Remove the ice cream from the freezer, and use a 1 inch circle cookie cutter to cut into the ice cream.
  4. Now, place an ice cream circle onto the bottom half of the cookie, followed by the top cookie. Repeat until all shells are filled, then place in the freezer to set for at least 2 hours.
  5. Serve once set, or if desired, dip the sandwiches.
  6. For dipping: heat the whipping cream in a sauce pan until simmering. Add the chocolate and mix until melted and fully incorporated, adding more whipping cream as needed. Dip the macaroons into the melted chocolate. Then, dip in other desired toppings- sprinkles, chopped nuts, etc. Set in the freezer for 10 minutes or until the chocolate hardens. Enjoy!
