Strawberry Rhubarb Crisp

What do I do with the ingredients while camping?
If you’re an avid camper like we are, you know that a cooler is your best friend while camping. Sometimes it can be hard to keep ice cream from melting so we would suggest making this treat on the first night. As far as the other ingredients, we would suggest measuring and prepping everything you can before you leave. This will make the assembly super easy!

Strawberry Rhubarb Crisp
Ingredients:
- 1 1/2 cup chopped rhubarbs
- 1 1/2 cup chopped strawberries (#2832)
- 1/3 cup granulated sugar (#1632)
- 1 tsp vanilla extract (#6919)
Topping:
- 1 cup old fashioned rolled oats (#1881)
- 1/2 cup flour (#2285)
- 1/4 cup granulated sugar (#1632)
- 1 tsp ground Korintji cinnamon (#1005)
- 1/2 tsp kosher salt (#1147)
- 5 Tbsp unsalted butter chilled and cut into cubes
- Vanilla ice cream
- 2 Mini Skillets (#1128)
Instructions:
- Preheat the oven to 350 F. If you are camping, make sure you have a fire going or warm charcoals.
- Firt, mix rhubarb, strawberries, sugar and vanilla in a large bowl.
- Divide the fruit mixture among two mini cast iron skillets or one larger skillet.
- In a medium bowl, whisk together the oats, flour, sugar, cinnamon, and salt. Using your fingers or a pastry cutter, work the butter into the oat mixture until coarse crumbs form.
- Sprinkle the oat mixture evenly over the fruit and bake for 30 minutes or until the fruit is tender. Serve warm with a scoop or two of ice cream.
