Thai Coconut Chili Chicken Skewers

Finding a recipe that is tasty & healthy can be hard, but the mix of coconut, zingy lime, and spices make our Thai Coconut Chili Chicken Skewers amazing. Plus, they don’t require a lot of prep time.

Can these be made ahead of time?

If you’re wanting to speed dinner up, try pre-cutting your chicken- or use our diced chicken (#7787) to skip a step. In addition, you can marinade the chicken in a bowl or Ziploc bag (#1979) overnight so soak up extra flavor. If you choose to add any veggies to these skewers, like onions or peppers, pre-cut those as well. Next, when you are ready to get going, make sure you soak your bamboo skewers for at least 30 minutes prior to assembly. Once those are soaked, assemble your skewers with the pre-cut chicken and veggies, grill, and enjoy!

  5. Transfer skewers to serving plates, garnish with fresh cilantro and serve immediately!
