Lemon Dill Salmon and Asparagus Foil Packet
These healthy Salmon and Asparagus Foil Packets are a great meal for a busy weeknight or a night out camping over a fire.
How do I cook this over a campfire?
Foil packet meals are extremely popular for camping because they don’t require any dishes, and they can be prepared before you leave. To cook, simply place your Salmon and Asparagus Foil Packet over an open fire and cook for about 25-30 minutes, or until the fish and asparagus are cooked through.

Lemon Dill Salmon and Asparagus Foil Packet
Ingredients:
- 1 lb asparagus (#3127)
- 1/2 cup chopped onion (#5772)
- 4 salmon fillets (#8669)
- 4 tbsp avocado oil (#3516)
- salt (#1146) and pepper (#1029) to taste
- 1 lemon thinly sliced & seeds removed
- 4 sprigs dill
- Optional: Rice to serve
Instructions:
- First, preheat oven to 450F.
- Cut 4 pieces of aluminum foil (#1963) to 12″ each. Place about 1/4 of the asparagus (about 6-7 stems) and 1/4 of the onion slices on each piece of foil. Place a salmon fillet on top.
- Drizzle 1 tbsp of avocado oil and sprinkle salt and pepper on each prepared packet. Move the salmon and asparagus around to make sure it’s evenly coated.
- Then, squeeze about 3 slices of lemon on top of each salmon and lay them on top. Place a sprig of dill on each.
- Bring the long sides of the foil up to the middle and fold the edges together. Roll up each of the sides and place them on a cookie sheet (#4020). Bake for 15-18 minutes or until salmon is flaky.
- Serve with rice and enjoy!
