This Caprese Tortellini Pasta Salad takes pasta salad to a whole new, tangy level.

Caprese Tortellini Pasta Salad

Ingredients:

• 9 oz cheese tortellini (#1815)
• 4 oz fresh mozzarella balls (marinated or regular)
• 1 pint cherry tomatoes
• fresh basil, to taste

Italian Dressing:

• 1-2 Tbsp Italian dressing Mix (#1698)
• 1/4 cup cider vinegar
• 1/4 cups of oil

Instructions:

1. First, bring a medium pot of water to a boil. Add your tortellini and cook 3-5 minutes until desired tenderness, stirring frequently. 
   
2. Then, strain/drain in a colander and run under cold water to halt the cooking process and prevent soggy noodles.
3. Transfer into a medium-large serving bowl along with mozzarella balls, tomatoes, and basil.
4. Next, make the dressing. Whisk all ingredients together and allow to sit. This will infuse all the flavors well.
5. Pour in dressing and toss to coat.
6. Dig in!
