Huevos Rancheros Breakfast Bowls
If you’re celebrating Cinco de Mayo or are just a fan of Mexican-inspired cuisine, Huevos Rancheros Breakfast Bowls are just what you need! The breakfast bowls are made with a black beans hash topped with bacon slices, a fried egg, pico de gallo then served with corn tortillas.

Huevos Rancheros Breakfast Bowls
Ingredients:
- 8 slices Daily’s Hardwood Smoked Honey Cured Thick Slices Bacon (#8463)
- 4 eggs
- 3 Tbsp Chef Shamy Garlic Butter (#8124)
- 2 cups Quincy Gold Loose Shredded Hash Browns (#2421)
- 1 can black beans
- 2 tsp AP Mild Chili Powder (#1014)
- 1/2 tsp AP Ground Cumin (#1442)
- 1 tsp lime juice
- Regal Coarse Sea Salt (#1147) and AP Black Pepper (#1028), to taste
- 1 cup pico de gallo
- Serve with corn tortilla, sour cream, avocado, and Tillamook Shredded Cheddar Cheese (#1866)
Instructions:
- First, cook the bacon until crisp in a frying pan. Remove from the bacon from the pan, then crack the eggs and cook to your liking. Season with salt and pepper.
- In another pan, melt the garlic butter. Add the hashbrowns, black beans, lime juice and spices. Saute until cooked, about 10-12 minutes.
- To serve, divide the potato mixture between four bowls. Top with an egg and serve with bacon, corn tortillas, and desired toppings.
