Korean Beef Frank Lettuce Wraps

  1. First, preheat your grill.
  2. Then, heat the avocado oil in a saucepan and add the ginger and garlic. Cook until fragrant, abut 30 seconds. Add the ketchup, soy sauce, 3 Tbsp sugar, and 1 Tbsp vinegar. Bring to a boil, then reduce heat and simmer for 5 minutes. Remove from heat and set aside.
  3. Next, microwave the remaining sugar and vinegar for about 30 seconds. Stir until the sugar dissolves, then add the cucumbers. Set aside.
  4. Now, grill the franks for 5-7 minutes, or until heated through.
  5. To assemble, first drain the cucumbers. Then, spread the homemade sauce onto the leaf, topping with 1 frank, cucumbers, and carrots. Add cilantro, green onion, and kimchee, if desired. Best if served immediately.
