Pan Seared Beef Fillet

Treat your special someone for Valentine’s day with this mouthwatering meal of blue cheese stuffed bacon wrapped beef fillet topped with a berry port sauce.

Pan Seared Beef Fillet

Ingredients:

Instructions:

  1. First, combine the blue cheese and parsley. Reserve 1/3 cup of mixture for garnish.
  2. To each fillet, slice the middle enough to stuff with the blue cheese mixture. Season with salt and pepper.
  3. Next, heat the oil in a skillet and sear the fillets on both sides until browned. Remove from the pan and set aside, reserving the drippings and oil for the sauce.
  4. Now, stuff with the blue cheese mixture and place in a baking pan- stuffing side up.
  5. Bake at 400F for 10 to 15 minutes, or until the desired doneness is reached.
  6. For the sauce, add the berries and sugar to a food processor and blend until smooth. Strain through a fine-mesh strainer into a bowl to remove the seeds. Now, heat the skillet with leftover drippings over high heat. Add the chocolate port and stir until reduced by half. Then, add the berry mixture and let it reduce by half again until it becomes syrupy.
  7. Drizzle the berry sauce over the fillets and enjoy!
