Shrimp Gnocchi in Lemon Garlic Sauce
Valentine’s Day is right around the corner, and if you’re looking for a special dish to impress your sweetheart, our February favorite is a delicious Shrimp Gnocchi with Lemon Garlic Sauce that’s sure to be a hit. This hearty dish is full of flavor, with juicy shrimp, pillowy gnocchi, and an irresistible lemon garlic sauce but it only takes a few minutes to put together. What You’ll Need:
-1 1/4 lb. of Rana Meals Solutions Potato Gnocchi (#2754)
-1 lb. of Newport Peeled & Deveined Raw Shrimp (#1545)
-2 Tbsp. of butter
-4 cloves of garlic
-4 ounces of cream cheese
-1 Tbsp. of Lehi Mills Peacock Brand All-Purpose Flour (#3199)
-1/4 C. of Sartori Classic Shaved Parmesan Cheese (#2886)
-1 1/4 C. of vegetable stock
-zest and juice from one lemon
-cherry tomatoes to garnish (optional)
-green onion to garnish (optional)
- Boil Gnocchi until it floats (approximately 2-3 minutes). Remove and drain.
- Heat half the butter in a frying pan over medium heat. Add the Shrimp and garlic, and cook for 2-3 minutes. Make sure Shrimp is cooked through, and remove from pan.
- Melt the rest of the butter and whisk in the Flour. Add vegetable stock and whisk until sauce thickens. Bring to a simmer.
- Add in cream cheese and Parmesan, and stir til they both melt into the sauce.
- Stir in lemon juice and zest.
- Add cooked Gnocchi and Shrimp, stir everything together.
- Top with sliced cherry tomatoes and green onions.
