Shrimp Pad Thai

Ingredients:

Instructions:

  1. First, cut the tofu into strips.
  2. Then, in a small bowl, stir together the lime juice, fish sauce and sugar until the sugar dissolved. Set aside.
  3. Next, heat the oil in a skillet over high heat. Then, add the tofu and cook until golden brown on all sides. Push to one side, then cook the shallot and garlic until fragrant.
  4. Now, add 1 Tbsp of oil to the pan. Scramble an egg (with the tofu, shallots and garlic pushed to one side), then mix with the tofu.
  5. Add the bean sprouts, scallions, noodles, fish sauce mixture, and shrimp. Cook, stirring frequently, until the shrimp is pink and opaque. Then, toss for 1 more minute.
  6. Divide between plates and garnish with chopped peanuts, bean sprouts, chives, and lime wedges. Enjoy!
